PUMPKIN PUREE

Ingredients

2 Sugar Pumpkins (the little ones)


Directions

1 Slice the pumpkins at their equator (assuming the stem it the North Pole).
2 Stab the skin of the halves with a fork.
3 Place 'em on a microwave-safe tray, guts-side down (so they look like little pumpkin domes).
4 Cover them, loosely, with a sheet of pastic wrap.
5 Stick them in the microwave and nuke them for a good couple of minutes.
(you'll know that they are done when a fork can pierce the pumpkin skin easily and the "meat" is soft and tender).
6 scoop out all of the "meat" into your food processor and puree it until smooth. Tah-Dah! It's simple, and easy. And BOY how it earns you cooking-cred when you casually tell someone, "Yeah, I made it from scratch."
