PUMPKIN BREAD

Ingredients

3 cups sugar
4 eggs
1 cup vegetable oil
2 cups pumpkin puree
3 1/2 cups flour
1 tsp cinnamon
1/2 teaspoon allspice
1 1/2 teaspoons salt
2 teaspoons baking soda
1 cup walnuts
1 cup raisins (boiled in a little water for 1-2 minutes, then cooled and drained)
2/3 cup water


Directions

0 preheat oven to 350 degrees F.
1 Cream together sugar, eggs, and vegetable oil.
2 Mix in pumpkin puree.
3 Mix in flour, cinnamon, allspice, salt, and baking soda.
4 Mix in nuts, raisins, and 2/3 cups of water.
5 Pour batter in 3 greased and flour-dusted coffee cans (each should be about 2/3 full).
6 Bake for 1 hour and 15 minutes.
7 Let cans cool for 20 minutes, then remove bread from cans (hold the can upside-down and twist).

(But THAT'S from a woman who uses *shudder* CANNED pumpkin, so take that as you will.)
